I highly recommend Mavis Beacon Teaches Typing. It is still in print.

As for learning, I learned on a manual typewriter in 8th grade in the fall of 1980. In 8th grade we had to pick shop track or home ec track. Each had 3 classes of twelve weeks. Shop had wood shop, metal shop, and typing. Home ec had sewing, cooking, and typing.
So, everyone at my school took typing in 8th grade. In 1980 central Wyoming, it was not a gendered skill.
